With barbecue season upon us it is far better to be safe than sorry when it comes to food.
So, NHS Tayside is issuing some food safety advice to stop the party turning sour.
The long summer days are perfect for getting family and friends together for a barbecue but with 5.5 million people in Britain suffering from foodborne illnesses each year it is important to take extra care when cooking outside.
When barbecuing, raw and undercooked meat carry a high risk of food poisoning so keep food safe for family and friends by following these food safety tips.
Wash your hands before preparing any food and especially between handling raw and cooked meat.
Food should be kept in the fridge or cool bag until they are ready to go on the barbecue and serving bowls should always be covered to protect from dirt and insects.
Always ensure that chicken, burgers, sausages and kebabs are cooked throughout, none of the meat is pink and the juices run clear.
If you’re barbecuing for lots of people, you could cook meat indoors and finish it off on the barbecue to add that summer barbecue flavour.
Raw and cooked foods should be kept apart at all time to avoid cross-contamination of bacteria from raw meat. Don’t allow cooked food to make contact with hands, chopping boards, knives or tongs which have touched raw food.
When you reheat food on the barbecue, make sure it’s piping hot all the way through before serving.
